Most briquettes are a blend of charcoal fines from multiple sources mixed with various binders. We own the Namibian production that supplies ours, so we stopped blending and made a briquette from a single source with nothing but charcoal and vegetable starch binder. Our testing shows around 3 hours of cooking from a single load, with roughly 1.5 hours above 200°C—nearly double the briquette it replaces.\u003c\/p\u003e\n\u003cp\u003eYou'll get about an hour above 250°C for searing, with peaks above 350°C. The key difference is heat retention: this briquette holds temperature in the cooking band longer than alternatives, which matters far more than peak heat when you're actually cooking.\u003c\/p\u003e\n\u003cp\u003e Less filler means less smoke, less smell, and a cleaner burn. You get a hint of smoke as it catches and very little after.\u003c\/p\u003e\n\u003cp\u003eThe ash comes out light and white, and the briquette is flavour neutral—it gets out of the way of the food. Build a pyramid, light with wood wool firelighters or a chimney starter, and wait for the grey ash coating. Spread them out for an even bed and consistent temperature.\u003c\/p\u003e\n\u003cp\u003e Roughly 5cm deep across the cooking area for normal grilling, more for spit roasting. Better to have too much than too little. Keep dry and Big K charcoal won't go off.
